ACE Cider Tea Cake

Ace Cider Tea Cake

  • Cake
  • 1 ¾ cups all purpose flour (8 ounces)
  • ½ tsp baking soda
  • ½ tsp ground ginger
  • ½ tsp salt
  • 4 ounces softened butter
  • 2/3 cup sugar (4 ounces)
  • 2 large eggs, lightly beaten
  • 1 cup cider, either Ace Honey or Ace Pumpkin
  • ½ cup dried apples, chopped
  • Glaze
  • ¾ cup powdered sugar (3 oz)
  • 1 Tbsp plus 2 tsp of cider (the same one used in the cake)
  • 1/8 tsp ground ginger
  1. Preheat your oven to 350 degrees, and lightly butter a loaf pan. Sift together the flour, baking powder, ginger, and salt. Beat the softened butter and the sugar together until they are light and fluffy. Add the eggs one at a time, stirring to combine well. Stir in the cider and the dried apples, then the flour mixture in two equal batches. Pour into the prepared loaf pan, then bake for 55 minutes, or until a toothpick stuck into the center of the cake comes out clean. Let the pan cool for 15 minutes, then remove from the pan and cool completely.
  1. Mix all indredients until throroughly blended. Drizzle over the cooled cake.
